Ingredients

spinach - 2 cups, puree
potatoes - 1 large, boiled, cubes
onion - one half cup , chopped
green chillies - 2, small, chopped
ginger-garlic paste - 1 teaspoon
tomato - 1 cup chopped
*garam masala powder- 1 teaspoon
sugar - one half tablespoon
salt to taste
vegetable oil -2 tablespoons
 
Recipe
 
1. Boil spinach leaves and make a puree.
2. Make a paste of onion, green chillies, ginger-garlic paste, chopped tomato.
3. Heat vegetable oil.  When hot, add paste of onion, green chillies, ginger-garlic paste, chopped tomato. Saute for 3-4 minutes.
4. Add spinach puree, garam masala powder,salt, sugar and boiled potato cubes.
5. Mix well and cook for 4-5 minutes, serve hot with roti/chapati or paratha.
 
Tip
 
*Garam masala powder - consists of cumin seeds, coriander seeds, black cumin seeds (Shahjira), cardamom, nutmeg powder, cloves, dry ginger powder and cinnamon. Dry roasted and ground. Gives an aromatic flavor, mostly used in North Indian cooking, also available in Indian stores.
