Ingredients
 
all purpose flour (maida) - 2 cups
baking soda - one half teaspoon
plain yogurt - one cup
salt - a teaspoon
sugar - 1 teaspoon
water (little bit) to form a firm dough
vegetable oil enough for dip frying
 
 
Recipe
 
1. Knead all purpose flour (maida) adding salt, sugar, baking soda and yogurt. Add little bit of water , only if necessary and knead it to form a firm dough. Maida does not absorb water as easily as whole wheat flour, so do not add yogurt all at a time.  Rather add spoonfuls of yogurt to make the kneading easy.  Cover dough with wet muslin cloth and set aside at least for 2 hours.
 
2. Divide the dough into 12-15 portions. Size of a bhatura is smaller than a roti/poli  and slightly bigger than a poori. Roll  each portion using rolling pin in circular shape, dusting a little bit of all purpose flour(maida) if need be.    
 
3. Heat vegetable oil in a wok.  Slip bhatura in hot oil ( feel the heat by keeping your palm over wok approx. 10"-12" ) and spoon oil using slotted spoon on both sides of bhatura. Turn when bubbles appears on the side facing you. Remove from heat and drain on kitchen paper and serve hot with chhole.
