black eyed peas curry

Ingredients
black eyed peas - 1 cup
onion - one half cup, chopped
tomato - one half cup, chopped
green chillies - 3-4, crushed
ginger-garlic paste - 1 teaspoon
red chili powder - one half tablespoon
jaggery / sugar - 1-2 tablespoon
salt to taste
vegetable oil - 2 tablespoons
mustard seeds - 1 teaspoon
cumin seeds - 1 teaspoon
turmeric - 1 teaspoon
cilantro to garnish
fresh grated coconut to garnish
Recipe
1. Soak black eyed peas for 5-6 hours or overnight and pressure cook for 3 whistles.
2. Heat vegetable oil in a sauce pan and add mustard seeds and cumin seeds. Wait until the mustard seeds splutter, then add turmeric, onions, green chillies, ginger-garlic paste and fry for 3-4 minutes.
3. Add chopped tomatoes and fry for another 3-4 minutes. Mix well adding cooked black eyed peas, red chili powder, Maharashtrian goda masala, jaggery and salt. Garnish with cilantro and grated fresh coconut , serve hot with roti/poli.
