Ingredients
 
white chickpea / chhole - 2 cups
onion - one half cup, chopped
green chillies - 3/4
ginger-garlic paste - 1 teaspoon
tomato - 1 cup , puree
chhole masala - 1 tablespoon
sugar / jaggery - 1 tablespoon
red chili powder - 1 teaspoon
salt to taste
vegetable oil - 1-2 tablespoons
bay leaves - 4-5
cloves - 3-4
turmeric - 1 teaspoon
cilantro to garnish
 
 
Recipe
 
1. Soak chickpea / chhole overnight and pressure cook  adding salt and a pinch of turmeric for 3 whistles.
 
2. Grind chopped onions, green chillies and ginger -garlic to a fine paste.
 
3. Heat vegetable oil in a sauce pan , add  bay leaves, cloves and the paste, fry until golden brown. 
 
4. Add tomato puree and fry for 4-5 minutes. Add cooked chickpea / chhole , red chili powder, chhole masala , jaggary, salt. Mix well and cook for another  3-4 minutes. Garnish with chopped cilantro and serve hot with 
Bhature ( fried flatbread).
