 cucumber salad
(kakadi koshimbir/khamang kakadi)
 
 
Ingredients
 
cucumber - 1 medium sized
plain yogurt - 4-5 tablespoons
sugar - 1/2 tablespoon
crushed groundnuts - 2-3 tablespoons
vegetable oil - 1 tablespoon
cumin seeds - 1 teaspoon
green chillies - 1-2 small, chopped
curry leaves - 4-5
salt to taste
cilantro to garnish
 
 
Recipe 
 
1. Peel off the skin of cucumber and finely cut or grate it.  You can use a food processor to chop the cucumber when making in ample quantity.
 
2. In a salad bowl ,take finely chopped or grated cucumber and add crushed groundnuts, plain yogurt, sugar and salt.
 
3. Heat vegetable oil in a small fry pan. Add cumin seeds,  let them pop out and then add curry leaves, green chillies. Shake the pan and remove it from heat.  Let it cool down for a couple of minutes. Mix well and garnish with cilantro.
 
 
Tip
 
Make this salad just before serving as it will be watery if you keep it for some time. To avoid it being watery, squeeze the chopped or grated cucumber with both hands. Use this squeezed cucumber for salad , thus you can prevent it from being watery.
 
Collect the juices squeezed out of cucumber in a bowl. Do not throw it away as you can make a tasty, healthy drink out of it. Add a pinch of sugar and salt to the cucumber juice, garnish with mint leaves , mix well and your drink is ready. Or use it to nourish your skin -apply cucumber juice to face and neck , wait for 5-7 minutes and then rinse off.
