Ingredientsgreen chillies - 10-12, thin
gram flour/besan - one half cup
red chili powder - 1 teaspoon
turmeric - a pinch
carom seeds/owa - 1 teaspoon
salt to taste
water enough for batter
vegetable oil for deep frying
Recipe
1. Slit the green chillies vertically (do not remove the stem) . You can remove the seeds to control the spice but I prefer to keep the seeds intact as it gives the perfect hot taste.

2. Add red chili powder, turmeric, carom seeds and salt to gram flour/besan. Also add water to make batter. The consistency of batter should be similar to pancake.
3. Heat vegetable oil in a wok . Dip slit green chillies one by one in the batter and slip in hot oil. Deep fry both sides, remove and drain on kitchen paper.
