 mixed vegetable rice
(hema-aaji bhaat)
 
 This one is my daughter's favorite, she calls it Hema-aaji bhaat (aaji=grandma) because the first time she had it, it was cooked by my mom!

Ingredients
 
rice - Jasmine 2 cups
onion -one half cup finely chopped
tomatoes - 2 , finely chopped
potato -1 large, cubes
frozen vegetables - one half cup
ginger- garlic paste - one tea spoon
black pepper - 1 teaspoon
bay leaves - 1-2
cinnamon - 2 small sicks
cloves - 3-4
garam masala- one tea spoon
water - 3 1/2 (for rice)
vegetable oil - 2 table spoons
red chili powder a pinch
salt to taste
sugar a pinch
cilantro - for garnishing
dessicated coconut to garnish 
 
 
Recipe 
 
1. Wash rice. Drain water and set aside for 20 minutes (see steamed rice).
 
2. Heat vegetable oil in a nonstick cookware or in a pressure pan, add black pepper, bay leaves, cinnamon  and cloves. Saute for a couple of minutes. Add chopped onion, diced potatoes, chopped tomato, ginger-garlic paste and frozen vegetables, saute for 3-4 minutes.
 
3. Add rice, water, garam masala , red chili powder, sugar and salt to taste. Mix well , cover and cook.  Garnish with cilantro and dessicated coconut serve with salad.
