whole green gram dosa
(moong dosa)

Ingredients

whole green gram - 2 cups
rice (raw) - 0ne fourth cup
green chillies - 5-6, crushed
ginger-garlic paste - one half tablespoon
onion  - one half cup , chopped
cilantro - one fourth cup, chopped
cumin seeds -one teaspoon
salt to taste
water enough for thick batter
vegetable oil enough for brushing griddle

Recipe

1. Soak whole green gram and rice for 6-7 hours or overnight separately. Drain and grind together to a smooth batter. Batter should be of pancakes consistency,  so if need be add little bit of water.

2. Add crushed green chillies, cumin seeds, ginger-garlic paste , cilantro, salt to taste and mix well.

3. Heat griddle and brush with vegetable oil. Sprinkle a little bit of water after few minutes and wipe it with a clean cloth. Immediately pour batter at the center of the griddle and start spreading  out in circular motion to get a thin layer . Spreading of batter is crucial , especially when the griddle is very hot . This will lead to sticking of batter or uneven spreading.

4. Sprinkle chopped onions on top of the spread out batter and pour few drops of vegetable oil around the edges of the batter which makes turning the sides easy.  When edges of batter starts browning, turn and cook.  Remove from heat using a flat spoon.  Serve hot with coconut chutney and tomato ketchup.
