palak paratha
Ingredients
whole wheat flour - one and half cup
spinach - 1 cup, finely chopped
onion - one fourth cup
green chillies - 3-4, chopped
ginger-garlic paste - one half tablespoon
mint leaves - 6-7 (optional)
yogurt - 2 tablespoons
red chili powder - 1 teaspoon
carom seeds/owa - 1 teaspoon
turmeric - 0ne teaspoon
salt to taste
vegetable oil - enough for kneading dough
butter - enough for roast parathas
water - enough to form a firm dough
Recipe
1. Grind onion, green chillies and mint leaves to a fine paste. Mix well with whole wheat flour, finely chopped spinach, ginger-garlic paste, red chili powder, carom seeds, turmeric, yogurt and salt. Knead well adding little bit of water and form a firm dough.
2. This dough will make 8-10 medium sized parathas. Divide the dough into 8-10 rounded portions. Place a flat, non-greased griddle on stove over moderate heat.
3. Take one portion of dough and dip it into flour. Then roll it with a rolling pin in a circular shape.
4. Place rolled paratha on a pre-heated griddle , turn the paratha over when the bubbles appear or when light brown spots are seen on the side facing griddle. Brush up both sides of paratha with butter and serve hot with tomato ketchup and plain yogurt.
Tip
You can use spinach puree instead of finely chopped spinach. If you are using spinach puree, add water only if need be.
